Vegan Confetti Cupcakes
Just like you remember from childhood. Perfect for birthdays, holidays, Tuesdays…
Makes 12 cupcakes. Double recipe for two 9 inch layers.
1 c. non-dairy milk (such as almond, soy, cashew or coconut) + 1 tsp apple cider vinegar
½ c. (1 stick) Earth Balance vegan butter, softened
1 scant c. granulated sugar
1 t. vanilla extract
1 ½ c. all-purpose flour
1 ½ t. baking powder
½ t baking soda
¼ t salt
Optional: 1/3 c. rainbow sprinkles or nonpareils for Confetti cake

2015 was a great year for us despite the lack of sleep (new baby, new home will do that). As we get ready for 2016, I thought it would be fun to highlight our top 5 posts of 2015 in different categories:
This was our most popular “sweet” recipe of 2015. Nothing sweetens the day like homemade goodies so we’ll be sure to bring you lots of healthy versions of cookie, muffin, scone, cake, and pie recipes in 2016! Matcha is one of those “super food” ingredients that it’s hard to know what to do with so stay tuned for more recipes in that area!
One of my favorite recipes, Donat’s Creamy Vegan Broccoli Mushroom Soup was the top savory dish for 2015. It’s perfect for cold wet days (like today!) so give it a try. We have many more healthy vegan dishes to share with you in 2016!

Vegan Kale-Rice Casserole Recipe
Casseroles are amazing because oftentimes you can double a recipe, adding two minutes to prep time, and have another full meal ready for later. We love to freeze one batch and have a delicious dinner ready by just popping a casserole right in the oven. This recipe we like in particular because of its ease, short prep time, incredible nutritional value and awesome flavor. We’ve given many non-vegans this dish to try and they all LOVED it! Try it out, you will not be disappointed.
1 large onion, chopped
4 cloves garlic, minced
2 tablespoons EVOO
2 14 ½ cans organic diced tomatoes
Basil, Oregano, Garlic powder, Salt and Pepper to taste
1 packet of tofu, drained
4 cups cooked brown rice
1 10-ounce package of fresh chopped kale
1 cup nutritional yeast
Vegan Pasta Alfredo Recipe
Whether you are in the mood for a delicious pasta dish or just want some alfredo sauce without the saturated fat and cholesterol of the dairy-based version, you are in for a treat. Here is a quick and easy recipe for completely vegan, but more importantly, completely scrumptious alfredo sauce. With lots of good proteins, fats and nutrients, this recipe is very well rounded. Pour over your favorite pasta, add a veggie on the side and enjoy!
1 medium chopped onion

3+ Cloves of garlic (the more the merrier)
¾ cup cashews
8oz silken tofu
¼ cup nutritional yeast
~2 cups of water or veggie stock

Butternut Squash Vegan Mac and Cheese Recipe
If you want a very decadent tasting meal that’s actually super healthy, look no further. This is a recipe that wifey and I have been making for a couple of years now and we absolutely love it. There are tons of vegan mac and cheese recipes but few are even close to healthy as this one and it tastes great!
