Vegan Matcha Chocolate Chip Muffin Recipe

Matcha is a new health food item in our pantry but one that has an immense amount of health benefits. So we’ve been trying to find more ways to add matcha into our lives and came up with this little delicious muffin recipe.

Vegan Matcha Chocolate Chip Muffins

Vegan Matcha Chocolate Chip Muffins

1 ¾ Cups whole wheat flour
1 tsp. Arrowroot powder
2 tsp. baking powder
1 tsp. vanilla extract
2 tsp. Matcha
2/3 cup almond milk
2 Tbsp. squeezed lemon juice
1/3 cup maple syrup
1/3 cup olive oil
2/3 mashed banana
½ cup dark chocolate chips

Preheat the oven to 375⁰F. Combine the dry ingredients: whole wheat flour, arrowroot powder, baking powder and matcha in a bowl and sift it well so that they are evenly mixed. Combine the liquid ingredients: Almond milk, vanilla extract and lemon juice together in a separate bowl. Mash up 2/3 of a banana (or a whole banana depending on how much banana flavor you like). Mix in the mashed up banana into the liquid bowl and add in the olive oil and lemon juice. Combine the two bowls and mix the two together well without doing too much. Add in the chocolate chips and mix in.

Pour the batter into muffin pan with liners and bake for about 20 minutes or until you can poke it with a fork cleanly. Let it cool for a couple of minutes and enjoy!
